Yum. I love berries. I love Angel Food and Sponge Cake. I love whipped cream. I love bourbon (don’t fret, the booze cooks out, and I’m including an alcohol free version!!). I am in heaven right now, and you will be to when you try out this yummy dessert!
Angel Food Cake or Sponge cake, or pre-made cups
Strawberries and Blackberries (4 ripe cups)
1/4 cup bourbon, 1/4 cup water (use 1/4 cup water and 1/4 cup sugar free vanilla or hazlenut syrup)
Splash lemon juice
Sugar, to taste (if your fruit isn’t very ripe. Don’t use over two tablespoons).
Whipped Cream, Cool Whip, whichever you please
To start, make a little berry bath in the bourbon.
Let the berries soak for 1-2 hours (or more if you can wait that long).
After the liquid turns pretty dark pink/purple, dump into saucepan. This part is optional (but awesome)- bring a match to the liquid and burn off the alcohol from the bourbon. This will give a delicious caramel flavor to the berries. When the flames are gone, turn on the heat to high and boil vigorously until there is only a little liquid.
Turn to low to cook out most of the remaining liquid (don’t let it burn- there will always be a good deal of liquid, but you want most of it gone). The berries and liquid will be very dark, and will have reduced considerably.
Pour over sponge cake, and top with whipped cream/topping. I used Fat/Sugar free Cool Whip (does that make up for the Jambalaya we had for dinner?) that I pumped through a pastry bag for some pretty swirls. Because with a recipe this easy, why not?
