We’re currently on a paleo diet, meaning we’re not eating flours, starches, sugars… basically anything non-meat/fruit/vegetable. One thing I totally miss being on this diet is blended coffee drinks- but they are FULL of sugar and fat, so I decided to make my own at home with some Seattle’s Best Coffee and Chocolate Almond milk while I browsed the Red Cup Challenge boards on Pinterest to find some great coffee ideas!

Now, let’s get started. My recipe is pretty darn easy. Like, three ingredients. Yea… I am really thinking out of the box here. But what can I say, food should taste good without a ton of work!
First, brew your coffee. Let it cool slightly (or you can use the leftover coffee from your morning pot). Fill a glass half full with ice, and then half full of coffee. Then top with chocolate almond milk, and blend.
Blend until completely smooth, and stir in honey if needed for a little extra sweetness.
I love to serve my drinks in fun cups- and today I picked some adorable mason jars with flower lids and some gorgeous paper straws. Such a fun treat for an afternoon pick me up on a HOT day!
