These hot summer days are really wearing on me, and my waistline.
I’ve been dieting since baby B came in April- but there is one treat I just can’t give up in this heat- ice cream is my kryptonite! I have a couple scoops a day. It isn’t optional- I am a full on, raving addict!
I especially love froyo shops where I can pick my treat and mix in toppings. I also love that it isn’t completely detrimental to my derriere as frozen yogurt tends to have much lower fat and calories. (Which means the candy bars I dump into them are calorie-free, right??)
Needless to day, I was really excited recently when I was invited to try out TCBY’s new freezer aisle treats, which are now available at Wal-Mart.
I also grabbed some delicious chocolates to go with my toffee frozen yogurt- including some European toffee bars. YUM!

With three delicious flavors in hand (Peach mango, english toffee and strawberry), I decided to make some delicious treats for the family to beat the summer heat. My hubby and I both love fresh fruit, and we both love toffee- so I made us two different parfaits so we could each eat half- and switch! It was the perfect way to indulge on a hot summer night.
I think that serving simple treats in a mason jar is a lovely way to make quick and simple desserts look effortlessly elegant- so I was glad to bust out some spare jars I had.
Here’s how I made them:
English Toffee & Heath Bar Parfait
-1 pint english toffee TCBY Frozen Yogurt
-1 Heath bar- 1/2 crumbled, 1/2 whole
First, toss 1/2 your heath bar in a plastic bag, and hit with meat tenderizer, rolling pin- whatever you can use to crush it into bits.
Add a layer of froyo to the bottom of the mason jar.
Sprinkle in heath bar chunks and spread out to make one layer.
Add another layer of froyo, top with 1/2 heath bar that is still whole.
Fresh Fruit and Peach Mano Frozen Yogurt Parfait
-1 pint peach mango TCBY frozen yogurt
-strawberries, sliced thin
Lay a few blackberries and strawberries at the bottom of your jar.
Add a layer of peach mango frozen yogurt.
In the middle of the jar, add another layer of strawberries and blackberries.
Add another layer of frozen yogurt.
Top with a blackberry and two strawberry slices.
Little man really enjoyed his- though he got a plastic cup, not a mason jar. I know, I am no fun- I just am too lazy to clean up broken glass . He loved the peach with fresh fruit- blackberries are his absolute favorite (he pops them like tic-tacs), and thought is was marvelous I was offering him this snack BEFORE dinner. Sometimes I think there are great perks to being the child of a blogger!
